Meatballs in a Cranberry Sauce
Prep Time: 25 min; Cook Time: 50 min; Total Time: 1 hr, 15 min.
Makes about 40 meatballs.
Ingredients:
- 2 lbs ground beef
- ¾ cups bread crumbs
- 4 tsp dried parsley
- 2 eggs
- 1 TBSP onion powder
- 2 TBSP soy sauce
- 2 tsp minced garlic
- 1 can of cranberry sauce, jelly style
- 1 ¼ cup ketchup
- 2 TBSP brown sugar, packed
- 1 TBSP lemon juice
Ingredients:
- Preheat the oven to 375° F.
- Mix the ground beef, bread crumbs, parsley, onion powder, soy sauce, and minced garlic in a large bowl.
- Roll the mixture into balls, about two teaspoons at a time.
- Place the balls in a single layer in a deep baking dish.
- Bake for about 20 minutes until the balls have browned.
- Drain off the grease.
- On the stovetop, add the cranberry sauce, ketchup, brown sugar, and lemon juice to a pot and cook on medium heat until the mixture is well combined.
- Pour this sauce on top of the meatballs and return them to the oven, cooking for another half hour.
Cranberry Salsa
Total Time: 15 min.
Ingredients:
- Fresh cranberries (12 oz bag)
- 1 cup granulated sugar
- 1 TBSP dried cilantro
- 1 cup green onions, cut into 2” long strips
- 1 jalapeno, minced
- ¼ cup lime juice
- 1 tsp salt
Instructions:
- Process all of the ingredients in a food processor to the desired texture.
- Serve with crackers or chips.
Candied Pecans
Prep Time: 5 min; Cook Time: 1 hr; Total Time: 1 hr, 5 min
Ingredients:
- 1 egg white
- 1 TBSP water
- 1 cup granulated sugar
- 1 tsp ground cinnamon
- 3 cups shelled pecans
Instructions:
- Preheat the oven to 250°F.
- Line a baking sheet with parchment paper.
- Put the egg white and water in a bowl and whisk it together until it’s frothy.
- In a different bowl, combine the sugar, salt, and cinnamon.
- Coat the pecans in the egg-white mixture.
- Toss the sugar mixture over the pecans to also coat them in that.
- Spread out the pecans on the baking sheet in a single layer.
- Place in the oven and bake for about 60 minutes, stirring every quarter of an hour.
