- 1 TBSP salt
- 1 TBSP oil
- 8 tortillas
- Pico de gallo
- Red onion – slice into thin strips
- Cilantro leaves – chop roughly
- Hot sauce or taco sauce
Instructions:
- Whisk the eggs, add a touch of water, and whisk some more.
- Add the seasonings and whisk until well mixed.
- Heat the oil in a skillet on medium-low heat. Add the eggs and scramble them into relatively large pieces.
- Warm the tortillas.
- Add egg and topping with the pico de gallo, onions, cilantro, and sauce to create the tacos.
Quesadillas in a Flash
Prep Time: 3 min; Cook Time: 6 min; Total Time: 9 min
Makes 4 quesadillas; serves 4.
Ingredients:
- 8 tortillas
- 1 cup sharp cheddar cheese, shredded
- 1 cup Colby Jack cheese, shredded
- ¼ cup pico de gallo
- ½ tsp salt
- Oil
- Fillers of your choice – (canned chicken (or rotisserie), cooked ground beef, walnut crumbles, black beans, avocado, green onions, canned corn)
- Toppings – sour cream, taco sauce, hot sauce, cilantro, salsa, guacamole
Instructions:
- Add the cheese, pico de galls, salt on half of each tortilla, and your choice of fillings (don’t overstuff).
- Fold the tortilla over.
- Heat the oil on medium-high heat, and cook each quesadilla to brown on each side.
- Serve sliced or whole with your choice of sauces.
Pizza In-a-Flash
Prep Time: 5 min; Cook Time: 5 min; Total Time: 10 min
Ingredients:
- 4 pieces of pita bread
- Olive oil
- 1 cup pizza sauce
- 1 cup mozzarella cheese
- Parmesan cheese
- salt
- Additional toppings of your choice
Instructions:
- Preheat the oven to 425°. Heat a pizza stone during the preheat cycle for best performance if you plan to use it.
- Brush your pita bread with olive oil on each side.
- Compose your pizzas with sauce, cheese, salt, and toppings.
- Bake your pita pizzas for five minutes until the cheese is melted.
Garlic Buttery Noodles
Prep Time: 8 min; Cook Time: 10 min; Total Time: 18 min
Ingredients:
- Spaghetti noodles
- 2 tsp minced garlic
- 4 TBSP butter
- ½ cup Parmesan cheese, grated
- 1 tsp dried parsley
- salt
Instructions:
- Salt water and bring to a boil.
- Cook the pasta to al dente, according to the directions on the box.
- Keep ½ cup of the pasta water and set aside.
- Drain the pasta, return it to the pot, and toss with olive oil to keep the noodles from sticking together while you prepare the sauce.
- Heat a skillet as the noodles cook on medium-low, and begin heating the butter.
- Add the garlic and cook for a couple of minutes until the sauce is fragrant.
- Add the drained pasta, cheese, parsley, a pinch of salt, and the pasta water a couple of tablespoons at a time until the mixture is saucy.
