Mini Taco Bowls for Appetizers
Prep Time: 10 min; Cook Time: 25 min; Total Time: 35 min
Ingredients:
- 1 TBSP olive oil
- 1 lb. ground beef
- 1 packet of taco seasoning
- ¾ cup taco sauce
- 1 bag of tortilla chips (the dipping kind)
- Toppings of your choice – shredded fiesta cheese blend, sour cream, avocado, salsa, lettuce, onion, tomato, pico de gallo, etc.)
Instructions:
- Brown the beef and drain it.
- Add the seasoning and ½ cup of water. Simmer for about five minutes.
- Stir in the taco sauce, reduce the heat, and simmer for another five minutes.
- Add the meat mixture to each tortilla dipper chip and top with the toppings you like.
Mini BLT Sliders
Prep Time: 25 min; Cook Time: 35 min; Total Time: 50 min
Ingredients:
- Thick-cut bacon – about 6 strips
- 1 roll of refrigerated crescent roll dough
- 1 TBSP butter, melted
- ¼ cup mayo
- 1 tsp basil
- Salt and pepper
- Grape tomatoes, halved
- Lettuce, cut into bite-sized pieces
Instructions:
- Preheat the oven to 350°.
- Prepare a banking sheet lined with parchment paper.
- Cut the bacon into bite-sized pieces, place them on the baking sheet, and cook in the oven for about 20 minutes. When the bacon is crispy, remove to drain the bacon on paper towels to remove excess grease.
- Change the parchment paper on the baking sheet, replacing the old piece with a fresh one. Bump up the oven’s heat to 375°.
- Lightly flour a work surface and spread out the crescent dough.
- Use a round cookie or biscuit cutter to cut out about 72 small pieces of dough for the sliders’ top and bottom. (We’re making three dozen.)
- Brush each circle with melted butter and cook for 10 minutes, until the “buns” are golden. Remove them from the oven and transfer to a cooling rack.
- Add the basil, salt, and pepper to the mayonnaise for the mayo.
- Spread some of the mayo on half of the rolls.
- Make your “sliders” with toothpicks or skewers, adding a roll with the toasted side facing up, a tomato half, a lettuce piece, and a piece of bacon. Add the top “roll” and have a mini BLT slider as an appetizer at your grad celebration!
