Easy but Delicious Thanksgiving Recipes
Simple Thanksgiving Salad
Ingredients:
- Salad
- 4 cups butternut squash, cut into ½” cubes
- 2 TBSP olive oil
- Salt
- ½ cup fresh green beans
- 1 cup pecans, toasted and chopped
- ½ cup extra sharp Cheddar cheese, shredded
- ½ cup raisins
- ½ cup fried onions
- 3 hearts of Romaine lettuce, roughly chopped
- 1 sweet apple, cored and sliced
- Dressing
- 2 TBSP apple cider
- 2 TBSP white wine vinegar
- 2 tsp local honey
- ½ cup olive oil
- Salt and pepper
Instructions:
Salad –
- Preheat the oven to 400° F.
- Prepare a baking sheet with a liner of parchment paper.
- Toss the butternut squash in the olive oil and a bit of salt.
- Cook the squash for about 20 minutes until done.
- On medium-high heat, boil a small pot of salted water. Add the green beans and cook for about one minute.
- Drain the green beans under cold water and cut them into bite-sized lengths.
- Layer the roasted squash, cooked green beans, pecans, cheese, raisins, fried onions, lettuce, and apples in a large salad bowl.
Dressing –
- Whisk together the cider, vinegar, and honey.
- As you continue to whisk, slowly add the oil.
- Add in a bit of salt and pepper and whisk again.
Dress and toss the salad to serve!
Air Fryer Turkey
Ingredients:
- 1 tsp salt
- 1 tsp thyme
- 1 tsp rosemary
- ½ tsp pepper
- ½ tsp sage
- ¾ tsp garlic powder
- ½ tsp paprika
- ½ tsp brown sugar
- 1 turkey breast
- Olive oil
Instructions:
- Mix the seasonings and sugar in a bowl, creating a dry rub.
- Brush or rub the turkey with olive oil, and then apply the dry rub mixture all over it, concentrating on areas underneath its skin.
- Skin down, place the turkey in the air fryer, and cook at 360° for 20 minutes.
- Flip the turkey (careful!). Cook for about 15 more minutes. When done, the bird should be 165° when checked.
- Let the turkey rest for a minimum of 10 minutes before slicing.
Instant Pot Mashed Potatoes
Ingredients:
- 5 lbs medium-sized russet potatoes
- 3 cups water
- 1 ½ cups milk
- 1 cup butter or margarine
- 1 cup sour cream
- ½ cup mayonnaise
- Salt and pepper
Instructions:
- Place the rack in the bottom of your Instant Pot and stack the peeled potatoes on it.
- Add the water to the pot.
- Secure the lid and set the pot to pressure cook for about 15 minutes.
- When complete, let the pot release the steam naturally for 20 minutes, and then press the valve to release the rest of the steam.
- Remove the lid and carefully put the potatoes in a large mixing bowl.
- Add the milk, butter, sour cream, and mayonnaise and mash with the potatoes using a potato masher.
- Add salt and pepper as you like and stir together.
