Shrimp Boil in the Oven
Prep Time: 10 min; Cook Time: 30 min; Total Time: 40 min.
Ingredients:
- 1 lb gold small potatoes
- 4 ears of corn, slice into chunks
- ½ cup butter, melted
- 2 TBSP minced garlic
- 1 TBSP Old Bay seasoning
- 1 lb. shrimp, peeled and deveined
- 1 pack of andouille smoked sausage, sliced into medallions
- 1 lemon, wedged
- 2 TBSP parsley, roughly chopped
Instructions:
- Preheat the oven to 410°.
- Line a baking sheet with parchment paper.
- Boil the potatoes in well-salted water for about 10 minutes; add the corn midway through.
- Drain.
- Mix the butter, minced garlic, and Old Bay in a bowl.
- On the baking sheet, lay the cooked potatoes and corn, the shrimp, and the sausage in one layer.
- Drizzle over the butter and toss.
- Bake for about 13 minutes until the shrimp are done.
- Serve with lemon wedges and parsley.
Salmon Pasta in the Oven
Prep Time: 10 min; Cook Time: 30 min; Total Time: 40 min
Ingredients:
- 1 lb. salmon, filleted
- 1 package of grape tomatoes, halved
- 1 green onion, chopped finely
- 1 TBSP minced garlic
- ¼ cup olives
- 1 TBSP + a bit olive oil
- 1 ½ tsp salt
- 1 tsp black pepper
- 1 cup feta cheese, crumbled
- 2 ½ tsp oregano
- 3 TBSP lemon juice
- 8 oz. rotini pasta
Instructions:
- Preheat the oven to 410°.
- Set the salmon out to rise to room temperature while you prepare everything.
- Chop up the tomatoes and green onion.
- Spray a baking dish with cooking spray (olive oil).
- Add the tomatoes, green onions, and olives to the dish.
- In a bowl, mix the olive oil, salt, and pepper.
- Add the feta to the pan.
- Add the olive oil mixture and toss.
- Pat dry your salmon and rub it with olive oil and salt—season with oregano and pepper.
- Place the salmon on the veggies.
- Drizzle over the lemon juice.
- Bake for 25 min, checking it after 15 for doneness. The fish should reach 130° and flake.
- Start a pot of water, salted well, to boil the pasta and prepare to the directions (al dente).
- Drain the pasta when done and drizzle with olive oil to keep it separated.
- Once the fish is done, tear it apart with a fork. Stir together the pasta, veggies, and fish.
- Enjoy!
