Pork is a versatile meat that is affordable and nutritious. Whether you make pork chops, ground pork fried rice, stir fry, crock pot meals, pulled pork sandwiches, or another dish entirely, pork offers your family various meals without breaking the bank.
Simple Pork Chop Supper
Prep Time: 15 min; Cook Time: 20 min; Rest Time: 25 min; Total Time: 1 hour
Ingredients:
- 4 pork chops, about 1” thick
- 2 tsp paprika
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper
- Olive oil, divided (1 ½ TBSP + 2 tsp)
- 1 lb. gold potatoes, prepped and cubed
- 1 red onion, chopped
- 2 tsp garlic powder
- 1 cup chicken stock
- 1 tsp brown mustard
- 1 tsp honey
- 1 TBSP lemon juice
- ¼ cup dill, chopped
- Salt
- Pepper
Instructions:
- Preheat the oven to 425ºF.
- Pat the pork chops dry with a paper towel and season with salt, pepper, paprika, smoked paprika, and cayenne pepper.
- Heat olive oil in a large skillet, and add the potatoes.
- Season the potatoes with salt and pepper.
- Cook on medium heat for about 10 minutes.
- Add the garlic powder and onion.
- Cook for another three minutes.
- Mix the broth, mustard, and honey. Adjust to taste.
- Heat the rest of the olive oil and add the pork chops, cooking for a few minutes on each side to sear the chops well.
- Place the potatoes around the pork chops in an oven-safe skillet or pan. Add the sauce and bring the mixture to a boil.
- Place the skillet in the preheated oven and cook for about 15 minutes. The temp should read at least 140ºF.
- When you remove the chops from the oven, they should rest for at least five minutes on a plate.
- Place the skillet with the potatoes remaining on the eye on medium heat. Add the lemon juice and the dill; cook another five minutes. Add salt and pepper.
- Serve.
Simple Stir Fry with Pork
Prep Time: 12 min; Cook Time: 15 min; Total Time: 27 min
Ingredients:
- ¼ cup soy sauce
- 2 tsp minced garlic
- 2 tsp ground ginger
- ½ cup water
- ⅓ cup honey
- 1 TBSP cornstarch
- 1 lb pork tenderloin
- 2 TBSP olive oil
- 1 package of frozen stir-fry veggie blend
Instructions:
- Mix the soy sauce, water, garlic, honey, and cornstarch.
- Cut your tenderloin ¼ inch thick slices, or ask the meat department here at Redner’s Markets to cut it for you.
- Heat your skillet on medium-high heat with a bit of oil.
- Cook the pork pieces until almost done, about five minutes.
- Add the veggies and continue cooking.
- Once the veggies have thawed, add your sauce mixture and turn up the heat, stirring without stopping until your mixture boils.
- Turn down the heat and let the sauce simmer for a few minutes. Remove from heat.
- To serve, cook your favorite kind of rice, prepare cauliflower rice, or boil your preferred style of pasta.
