Smoky, Sweet Turkey
Prep Time: 20 min; Total Time: 11 hr or more (brining plus cooking)
Ingredients:
- 1 turkey
- 2 TBSP paprika
- 1 TBSP tomato paste
- 1 TBSP apple cider vinegar
- 1 TBSP ground ancho pepper
- ½ tsp caraway seeds
- ½ tsp ground coriander
- 1 tsp cumin
- ⅛ tsp cayenne pepper
- 5 cloves garlic (peel)
- Olive oil
- 1 red onion (half)
- 1 orange
- 1 lemon
- 1 bunch thyme
- 4 ½ cups chicken broth
- ½ cup honey
Instructions:
- Prepare the turkey for overnight brining by setting the turnkey on the rack within a roasting pan, and rub the turkey down with salt and pepper.
- Allow the turkey to dry brine in the refrigerator, uncovered, for a minimum of eight hours. You can leave it overnight.
- When ready to cook, take out the turnkey to let it come to room temperature.
- Preheat your gas grill to medium heat.
- While the grill heats up, pulse the paprika, tomato paste, vinegar, chiles, caraway seeds, coriander seeds, cumin, cayenne pepper, and half of the garlic in a food processor.
- Add a bit of olive oil and pulse a few times to make a paste, and add salt to your preference.
- Stuff the turkey in preparation for cooking by placing the onion halves, orange, lemon, thyme, and the other half of the garlic in the turkey’s cavity.
- Use kitchen twine to tie the legs together, tuck under the wings, pour half of the broth into the pan, and make an aluminum foil tent over the turkey pan.
- Put the roasting pan on the grill and cook for ¾ of an hour (about 45 minutes).
- Pour the other two cups of chicken broth into the pan and cook for another 40 minutes. Check the internal temperature for 145°F.
- At this point, combine the honey with about ¼ cup of juices from the pan and whisk them together. Brush this mixture all over your turkey.
- Allow the turkey to cook for another 15 minutes until the internal temp reaches 155°F.
- Allow the turkey to rest for half an hour before serving! (The turkey will continue to cook, and the temp will rise to a safe 165° F.
