1 ripe fresh Hass avocado, halved, seeded, peeled and cubed
2 cups cooked USA Grown brown rice
1 ripe mango, peeled and cubed
1 (15-ounce) can black beans, drained
1 red bell pepper, diced
2 scallions, thinly sliced
2 Tbsp. fresh lime juice
1 Tbsp. olive oil
2 Tbsp. chopped fresh cilantro
1/2 tsp. salt
1/4 tsp. Pepper
Instructions
In a large bowl combine rice, beans, mango, bell pepper, scallions, lime juice, oil, cilantro, salt and pepper. Add avocado; toss gently.
